🐟 THE ULTIMATE FISH & CHIPS RECIPE 🐟

INGREDIENTS:
- 4 fresh cod fillets
- 2 cups all-purpose flour
- 1 cup ice-cold sparkling water
- 1 tsp baking powder
- Salt & pepper to taste
- 4 large potatoes (Maris Piper preferred)
- Vegetable oil for frying

THE SECRET:
Add 2 tbsp of malt vinegar to the batter and let it rest for 30 minutes.
This creates the crispiest coating you've ever tasted!

INSTRUCTIONS:
1. Cut potatoes into thick chips, soak in cold water for 1 hour
2. Mix flour, baking powder, salt, and sparkling water
3. Add the SECRET malt vinegar, rest for 30 min
4. Double fry chips: 130°C for 8 min, then 190°C until golden
5. Dip fish in batter, fry at 180°C for 6-8 minutes
6. Serve with mushy peas and tartar sauce
